Easy Cabbage, Potato & Smoked Sausage Bake and Smoked Tasso Greens

This recipe is so easy and tasty, everyone should try it!

½ small head cabbage, shredded
5 small red potatoes, quartered
½ small red onion, sliced
a drizzle of olive oil
Salt and pepper to taste

Preheat the oven to 350. I used a small baking dish (8x8), so if you are using a larger one, please adjust amounts accordingly. 

Add the first 3 ingredients to the baking dish. Add the olive oil, salt, pepper and Slap Ya Mama seasoning. Toss well to coat. Top with the sliced smoked sausage. Bake for about 20 minutes, then flip the sausage. Bake for about 15 minutes longer, until the potatoes are tender.

*I made this again, as it was a big hit with my fiance, and added carrots and some garlic powder – it was delicious! I like to adjust what I make depending on my mood and what I have on hand. I encourage you to do the same!

Smoked Tasso Greens

1 bag collard greens
½ chopped red onion
1 Tablespoon chopped garlic
Crushed red pepper
Olive oil
½ cup water
Salt and pepper
a squirt of lemon juice

Add a bit of olive oil to a large pan over medium heat. Add the onion, garlic and crushed red pepper (I like it spicy so add as much or as little as you deem fit).  Cook until the onion becomes translucent. Add the smoked tasso. Once the tasso gets crispy, add about ½ cup water to the pan and start adding the greens (you won't be able to add all of them at once).  Although the bag looks like a lot of greens, they will wilt and reduce in volume significantly. This is a process; once some of the greens wilt, add more and repeat until they are all in the pan. Simmer until the greens get nice and tender. When serving, squirt a bit of lemon juice on top.
