Strawberry Cream Crepes with Sciabica's Manzanillo Fall Harvest

1 cup flour
1 1/4 cup milk
1/4 teaspoon kosher salt
2 eggs
3 Tablespoons sugar
1/2 teaspoon vanilla, optional


Filling:
1 cup sliced strawberries
3 Tablespoons sugar
whipped cream

In a medium bowl, whisk flour, milk, salt, eggs, sugar, oil and vanilla until blended. Cover and chill for 2 hours.

Slice strawberries into a medium bowl and toss with sugar. Cover and chill for 1 hour. Remove and let sit on counter for 1 hour for juices to blend.

Heat a non-stick pan on medium heat. Brush pan very lightly with oil. Pour 3 tablespoons batter and tilt pan so batter spreads out thin. Check bottom after 30 seconds and flip when starting to brown. Check again after 30 seconds and remove to plate when lightly browned. Lightly brush pan after every other crepe.

Layer strawberries and whipped cream on 1/3 of crepe. Roll up and drizzle with some of the juice.
