Sciabica Garlic Pasta Salad

I love pasta salad.  We eat it a lot in the spring and summer.  It is like a breath of fresh air after all of the heavy side dishes from the winter.  This was so much more than that when I added the Sciabica Garlic Extra Virgin Olive Oil.  This is amazing.  The flavor, the way it glides around each and every ingredient in this salad.  Please enjoy!


Sciabica Garlic Pasta Salad

Salad ingredients:
1 8 ounce package tricolor spiral pasta, cooked, drained and cooled
1 pint of grape tomatoes, halved
1 6 ounce can sliced black olives, drained
1 medium red onion, chopped
2 large florets cauliflower, chopped
2 ounces pepperoni (I used the minis)
4 ounces mozzarella cheese, grated

Toss all of these ingredients in a large bowl and set aside.

Dressing:
1/4 cup Balsamic vinegar
1/2 teaspoon salt
1 Tablespoon fresh chopped basil

Mix all of these ingredients together in a small bowl.  I like to let it relax in the refrigerator for about an hour or so.

Toss 3/4 of the dressing with the pasta mixture.  Please let this blend together in the refrigerator for awhile.  Right before you are ready to serve, top with remaining dressing and toss.  Serve and watch the surprise on your guests faces.  They will want your recipe!
