Breaded Garlic Chicken Breasts

3 to 4 boneless, skinless chicken breasts, rinsed and dried well
1 1/2 cups seasoned bread crumbs
1/4 cup finely shredded Parmesan cheese
1 teaspoon salt
1/2 teaspoon freshly ground pepper


Preheat oven to 350°F and coat a 9 x 13 baking dish with non-stick cooking spray. Toss bread crumbs, Parmesan cheese, salt and pepper together in a shallow dish. Pour the 1/4 cup Sciabica's Garlic Extra Virgin Olive Oil in a small bowl.

Generously brush chicken breasts with garlic olive oil and then roll them in the bread crumb/Parmesan cheese mixture. Bake until internal temperature reaches 165°F (approximately 30 to 40 minutes). Let rest for 5 minutes and serve.

Tip: If you have leftover croutons that you don't intend to use in a salad anytime soon, they make great bread crumbs! I throw them in my food processor and pulse until they're finely ground. I do this all the time with my homemade croutons.

Also, when I make this recipe, I always have bread crumb mixture left over, so I put it in a resealable freezer bag, label it and save it to use another time. It's also great on pork chops!
