Have a Happy National Piña Colada Day with Piña Colada Pops!

It's National Piña Colada Day, so it's probably not going to take much convincing to get your crew to participate in such a delicious holiday.  The best Piña Coladas I ever had were in Waikiki, and they were good enough that I might want to return there just for that reason!  


I'm not sure how I came across Zipzicles, but it was at the same time I signed up for the National Food Holidays Challenge, and I was correct in thinking that Zipzicles and Piña Coladas are a match made in heaven.  These pops don't have any alcohol in them, and actually they only have three ingredients!  They are so easy to make and so delicious you just might want to keep them around all summer long!

Piña Colada Pops

1-20 ounce can pineapple chunks, the fruit and the juice
1-13.5 ounce can coconut milk, solids only, reserve the liquid for another purpose
1/8 - 1/4 teaspoon coconut extract

Place all ingredients in your blender and blend on the highest speed until the mixture is completely incorporated.  If you see little flecks of white, keep blending. You can use Zipzicles or popsicle molds with this recipe.  Follow manufacture instructions for filling and freezing and freeze until solid.

Variation:
Replace coconut milk solids with 2 ripe bananas!  Increase the coconut extract to 3/4 - 1 teaspoon.  We tried it and loved the combination!
