Wilted Kale with Bacon and Onions

Kale is a form of cabbage that is rich in vitamins and sulforaphane, a chemical with potent anti-cancer properties.  It is also tasty!  Spice it up with Slap Ya Mama Hot seasoning for an extra special side to your grilled chicken sprinkled with Slap Ya Mama Original Seasoning, which is how we make this dish!  Add roasted sweet potatoes for a healthful, delicious and quick meal that your family will ask for again and again.


4 slices bacon
1/2 cup chopped onion
1 bunch fresh kale, rinsed, stems removed, and roughly chopped
2 teaspoons Slap Ya Mama Hot Cajun Seasoning, or to taste


Cut the raw bacon into 1/2 inch pieces and fry in a large saute pan until the fat is rendered.  Add the onions and cook until they begin to brown.  Add the kale in batches, until wilted down, sprinkling with Slap Ya Mama Hot seasoning at the same time and mixing well to get it in all those lovely curly crevices!
