Slap Ya Mama Cajun Meatloaf in a Box

serves 8
prep time: 15 minutes

1/2 cup green bell pepper, diced
1/2 cup celery, diced
1/2 cup onion, diced
2 cups water, boiled
1 Slap Ya Mama Cajun Jambalaya Dinner Mix
2 pounds ground beef (I used ground bison.)


For the glaze:
1 cup ketchup
1-2 teaspoons Slap Ya Mama Hot Cajun Seasoning (Depends on how hot you like it. I used 2 teaspoons.)

Preheat oven to 400°F. Add first five ingredients to a mixing bowl and let sit for 5 minutes. Add the ground beef and mix all ingredients together with your hands until they are thoroughly dispersed. Take care that the rice mixture is not too hot to touch. Place the mixture in a lidded 2.5-quart oval baking dish (or similar), pressing it flat and evenly against the sides of the dish. Do not place the loaf in a mound. Bake meatloaf for one hour.

Remove meatloaf from the oven and brush the glaze evenly over the top. Bake for 15 minutes, uncovered. Remove from the oven again and let rest 10-15 minutes. Serve.
