Stuffed Mahi Mahi with Red Bean Sauce and Pineapples

I enjoyed the Slap Ya Mama products, although being from Canada I found them to be a bit spicy. Blending the Red Beans & Rice with the sour cream and pineapple gave it a nice balance.


Stuffed Mahi Mahi with Red Beans & Rice Sauce and Pineapples

4 thick Mahi Mahi steaks
1 box Slap Ya Mama Cajun Red Beans & Rice Dinner Mix
2 1/4 cups pineapple juice
1/4 cup sour cream
1 cup pineapple chunks, divided
1 cup spinach leaves
2 Tablespoons coconut oil

Slap Ya Mama Red Beans and Rice Sauce: 
Cook the Slap Ya Mama Red Beans & Rice as per directions on the package, replacing the water with pineapple juice. Cool slightly, place in a blender with the sour cream and 1/4 cup pineapple chunks, blend till smooth.

Preheat oven to 350°F.  Take each Mahi Mahi steak and slice open to form a pocket, as per the subway sandwich shop. Take 4 spinach leaves and place inside the pocket, along with 1 Tablespoon pineapple chunks and 1 Tablespoon Red Beans and Rice Sauce. Melt coconut oil in a non-stick fry pan and sear the Mahi Mahi steaks 2-3 minutes per side, until brown. Place in a buttered oval ramekin dish and bake in the oven for 15 minutes. In the remaining coconut oil, warm the remaining pineapple chunks.

Serve the Mahi Mahi with the Slap Ya Mama Red Beans and Rice Sauce and the warmed pineapple.
