Have a Happy Don't Put All Your Eggs in One Omelette Day with Everything/Anything in the Fridge Eggy Scrambles!

Pretty straightforward  right?  I love preparing individual egg scrambles and putting them in the fridge so all you need to do in the morning is make some coffee, put a frying pan over medium low heat and grab a spatula.  Follow the title!  Throw in whatever you have that sounds good to you and don't forget about those leftovers!


I cook for two, so this will make 6 individual scrambles, enough for three mornings.  I use one egg per scramble, lots of veggies and a bit of cheese or meat, if I’m feeling so inclined.  I think it is fun to throw different things in each one to mix it up a bit each morning.

Everything/Anything in the Fridge Eggy Scrambles

6 eggs
What I had in my fridge – multi-colored bell peppers, mushrooms, broccoli, red onion and feta cheese
Salt and pepper
Seasoning to taste
Milk

Prep all your vegetables.  Bell peppers get diced, cherry tomatoes quartered, onion gets diced, etc.  You want whatever veg you are using to be roughly all the same size and on the smaller side as this is super quick cooking.  Crack 1 egg into individual containers, (I use 1.5 cup Tupperware with lids).  Divide your add-ins however you like.  Based on the vegetables and/or meats and/or cheese, I then add my spices.  Add a splash of milk to each container, scramble with a fork and you’re all set until the morning!

To cook, spray your pan over medium low heat with a few sprays cooking spray.  Add your eggs, let them sit for a minute or two until the bottom begins to cook and with a spatula slowly move the eggs around the pan.  I like to do a more low and slow method when I do my eggs this way.  Stir them around, let them sit while sipping some coffee, stir again, etc., until the scramble comes together and the eggs are nice and fluffy.

Some of my favorite combinations I’ve done in the past:
Tomatoes, mozzarella, basil, garlic powder and crushed red pepper
Salsa, sharp cheddar, onion, cilantro, black beans, hot sauce
Sausage, mushroom, feta, oregano
Bacon, broccoli, cheddar – top with a small dollop of sour cream!
Roasted red pepper, spinach, Swiss cheese
Steak and cheese in the AM - Leftover steak, peppers, onion and American cheese – my fiancés favorite
